Fiberlicious Healthy Honey Cornmeal Muffins

I love the gritty texture of cornmeal, and wanted to incorporate it into a healthy breakfast on-the-go.  A touch of honey really brings out the yellow sunniness of cornmeal, and allow it’s natural flavours to shine through.

What you’ll need (makes around 12 muffins):

  • 1 cup cornmeal
  • 1 cup regular flour
  • 1 tbls baking powder
  • 1/4 cup sugar
  • a pinch of salt
  • 1 cup milk
  • 2 large eggs
  • 2 tbls of melted butter
  • 1/4 cup of honey

Preheat oven to 205 celsius.  

Combine cornmeal, flour, baking powder, sugar, and salt in a big bowl and mix well.  

In a separate bowl, beat together milk, eggs, honey and melted butter.  I usually first beat the honey and eggs together before adding milk as it makes it easier to emulsify the honey into the mix.

Add the liquid mix into the dry mix and fold in gently.  Remember the old wives’ wisdom about not overmixing your batter – a lumpy batter makes a fluffier muffin!

Pour into muffin tins (either lined with paper, or straight into a silicon tin).  

Bake for 20-25 minutes depending on your oven.  Test if they are ready by sticking a toothpick in the center of a random muffin.  If the toothpick comes out clean, the muffins are done.
