Vietnamese Eggy Baguette Sandwich

I got the inspiration to make this “under 5 minutes” meal from another foodie friend.  This is really one of the easiest, quickest ways to put together a scrumptious meal that really hits the comfort food mark, with it’s mix of crusty warm carbs and oozy eggy center.  It’s a portable sandwich that works well for breakfast, lunch, or dinner!

What you’ll need (serves 1):

  • 2 eggs
  • a handful of chopped green onions
  • 1 tsp fish sauce
  • 1 baguette
  • diced chili (optional)

Slice baguette in half lengthwise and slot into toaster.  Scramble eggs together, along with green onions, fish sauce, and if you prefer a little kick, some chopped chili.  Drizzle oil into a non-stick pan, let it sit over a medium flame for around 10 seconds, and pour in the eggy mixture.

Push the egg on the side so that the uncooked liquid center makes contact with the hot pan.  This will take around 1-2 minutes depending on how well done you like your omelette.

When the omelette is done, fold it and pile onto the warm baguette.
