Easy Peasy Garlic Bread with Roasted Garlic

This is a sure fire recipe to drive away the vampires (sorry Twilight fans), and since it’s been grey and drizzling in Hong Kong, I am also hoping it might drive the rain clouds away.

Here’s an unbelievably easy recipe from Jaime Oliver’s 30 Minute Meal, and since it’s garlic bread, why not go all the way and add a few cloves of sweet roasted garlic on top?  Along with a salad or soup (check out my carrot soup recipe here), this is the perfect weekday dinner ensemble for relaxing with a good glass of red and perhaps some Game of Thrones (my guilty pleasure)? 

What you’ll need:

For the Bread

  • Loaf of your choice of bread (ciabatta / baguette etc)
  • 5 tbls of butter
  • half a head of garlic
  • salt & pepper 
  • parchment paper
  • olive oil

For the Roasted Garlic

  • a whole head of garlic
  • olive oil
  • salt & pepper 

Pre-heat oven to 200degrees celsius.  

Cut the top of the garlic head off, drizzle with olive oil, sprinkle with salt and pepper, and place in the heated oven.  The garlic will be roasted in 30 minutes

Meanwhile…

Make horizontal cuts in the bread, but make sure to only cut 2/3 through.  

Peel garlic cloves and finely mince.  Mix into the butter, and add a good pinch of salt and pepper.

Smear a generous dollop of butter in between each incision in the bread.  

Scrunch up a piece of parchment paper and run it under the tap.  Wring it to remove excessive water.  Place the bread inside the parchment paper and drizzle with olive oil, finishing with another good pinch of course salt over top.  

Wrap the bread in the crinkled parchment paper and twist ends to secure.  Pop that in the oven for 20 minutes and be ready to be amazed!
