Parmesan dusted Asparagus

This is probably one of the simplest sides to make, and if you are roasting a main in the oven, it can be baked alongside to save time.

What you’ll need:

  • Asparagus (this recipe also works well with green beans)
  • Flaky salt & course pepper
  • Grated parmesan cheese
  • 1 tbls of olive oil

Pre-heat the oven to around 200 degrees celsius (the temperature doesn’t need to be precise).  

Layer asparagus onto a baking sheet and drizzle olive oil on top.  Sprinkle a good pinch of flaky salt and pepper onto the vegetables.  Roll them around so that all stalks are evenly coated with oil and seasoning.  Grate parmesan flakes over the vegetables.

Place in the pre-heated oven and roast for 10 minutes.  I prefer the center rack for this.

*Note:  if you want a stronger taste, you can also grate some garlic over the vegetables.
